The Waterloo Cheese is a semi-soft cheese created with unpasteurized Guernsey cow’s milk and rennet manufactured from vegetables. The cheese is created with a washed curd process, which dilutes the acidity and results in a mild, mellow flavour. The natural carotene in the unpasteurized Guernsey milk, which originates from a single herd of pedigree Guernsey cows, gives it its characteristic yellow colour.
