This golden sour is fermented using a Brettanomyces strain taken from a well-known Belgian trappist brewery.
When used for primary fermentation, the strain exhibits strong stone fruit, peach, and apricot characteristics.
This fruity base beer was then re-fermented with 200g/l Spanish white peaches.
