Tom’s Alpkase is an Italian-style classic Swiss Alpine cheese. Dry cellaring results in a sharper, dryer crunch than Gruyere or Comté. During the summer, cattle graze in a natural reserve high in the highlands. Silage-free raw milk 24 months old.
