Taleggio is a soft Italian cheese named after the Val Taleggio caves. Every autumn and winter, it is one of the oldest soft cheeses made. During the cheesemaking process, the acidic milk is brought to the lab and traditionally stored on wood shelves in chambers and caves. The cheese is washed with seawater once a week to keep mould at bay. The maturation process takes 6 to 10 weeks and results in the formation of a thin crust.

The cheese has a strong aroma, but it has a mild flavour with an unusual fruity tang. Taleggio can be grated and sprinkled on salads. It can be used in risotto and on polenta because it melts well.
