A hard-pressed cheese prepared with a vegetarian rennet from unpasteurized ewe’s milk. With an organic rind, spenwood is aged for nine months.

It has a well-developed, nutty flavour similar to Manchego and Pecorino, but when stored longer, it gets harder and more peppery, making it a superb replacement for Parmesan with pasta or risotto.
