The smoked variation of the traditional Westcombe Cheddar from Westcombe Dairy. The Cheddars are made with unpasteurized milk, aged for about 15 months in their hillside cheese cellar, and then smoked for 48 hours over beech wood. Beautiful coffee and caramel notes are deeply infused into the cheese by the smoking, adding amazing new levels of complexity. Great on its own, but epic in the kitchen, giving anything from burgers to rarebit to gratins a rich campfire flavour.
