Pale wheat beer produced spontaneously and matured in neutral French oak barrels for ten months. The beer was then poured over entire Ben Gairn blackcurrants from East Sussex’s Maynards Fruit Farm. Crossover Blendery pounded the fruit cap down every day for about two weeks after refermentation began. Before mixing and bottling, the beer sat on the fruit for four months.
