Marechal, a relative novelty in comparison to many other Alpine cheeses, was created in the early 1990s by Swiss cheesemaker Jean-Michel Rapin.

Marechal, made in the heart of Gruyere country, has many of its qualities, including firm, pressed, cooked curd with a silky buttery paste. Brine is rubbed into the rinds of newly produced cheeses to cure them. Hay clippings and flax blossoms are used to do this. This adds a subtle grassy aroma that builds to a herbaceous finish. We age wheels to roughly a year old to emphasise this attribute.
