Comte was the first cheese to be produced collectively, a process that dates back to the 12th century. Rivoire Jacquemin matures Mons-cheese Comte at Lons le Saunier, Franche-Comte.

They handpick their cheese with the intention of maturing it for 18 to 24 months. The texture is gently crystalline at this point, and they have a caramel, silky aspect that unfolds into a rich hazelnut flavour.
