Ashcombe is inspired by Morbier, a traditional French cheese from the Franche-Comté, and has a distinctive line of wood ash running through the centre. Ashcombe was conceived during Easter Lunch in 2020 as a response to an issue presented by lock down: how to use the millk from Manor Farm with no market to sell cheese to?

The rind is meaty and savoury, while the paste has warm milk and hay scents. The flavours are creamy and soothing, reminiscent of melted butter and fresh hazelnuts.

Description

David Jowett opted to utilise the milk to make a bigger, longer-aging cheese. Ashcombe has now become a staple of the modern British cheese platter.

The cheese is named for the ash that runs through it and the “Coombes,” which are steep-sided valleys that dot the Cotswold countryside surrounding King Stone Dairy.

Ashcombe is created in Gloucestershire, England at King Stone Dairy, Manor Farm, Chedworth.
